Here we go, the move is on

We went to our walk-through for the house were moving into.  I actually didn't realize how much room we would have! Everyone has their own room, Mike and I each have an office, and we have a spare bedroom, and second family room.
Here is the view from the back deck.

Fluffy Dairy Free Pancakes


Fluffiest Pancakes Ever!



1 cup Soy milk

4 tablespoons white vinegar

1 cup all-purpose flour

4 tablespoons white sugar

3 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

2 egg

4 tablespoons butter, melted or

       olive oil (I use olive oil to keep dairy free)

Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".

Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

Heat a large skillet over medium heat, and coat with cooking spray. Pour batter onto the skillet, (about 1/4 cup) and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Dairy-Free Fudge
This is the exact recipe with brands that I used. 
Ingredients:
3/4 cup dairy free margarine (Nucoa Buttery Sticks)
2/3 cup full fat soy milk (Silk Original, red carton)
3 cups sugar
2 cups dairy-free semi-sweet chocolate chips (Kirkland Signature Brand from Costco are dairy free)
1 teaspoon vanilla
1 - 7 oz. jar of marshmallow cream (or homemade)
Directions:
In a large pot combine the margarine, soymilk, and sugar. Cook over med-high heat, stirring continuously until the mixture reaches 234 degrees on a candy thermometer. Remove from heat.
Stir in chocolate chips until they are completely melted and completely mixed in.
Add vanilla; stir well.
Stir in marshmallow cream until it is completely mixed with the chocolate.
Pour fudge into a greased pan.
Let cool. You can put it in the refrigerator to cool quickly.
