We went to
our walk-through for the house were moving into. I actually didn't
realize how much room we would have! Everyone has their own room, Mike and I
each have an office, and we have a spare bedroom, and second family room.

Fluffy Dairy Free Pancakes
Fluffiest
Pancakes Ever!
1 cup Soy milk
4 tablespoons white vinegar
1 cup all-purpose flour
4 tablespoons white sugar
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 egg
4 tablespoons butter, melted or
olive
oil (I use olive oil to keep dairy free)
Combine milk with vinegar in a medium
bowl and set aside for 5 minutes to "sour".
Combine flour, sugar, baking powder,
baking soda, and salt in a large mixing bowl. Whisk egg and butter into
"soured" milk. Pour the flour mixture into the wet ingredients and
whisk until lumps are gone.
Heat a large skillet over medium heat,
and coat with cooking spray. Pour batter onto the skillet, (about 1/4 cup) and
cook until bubbles appear on the surface. Flip with a spatula, and cook until
browned on the other side.
